Avocado Chicken Salad

I thought a car was the worst thing to be without.
I was wrong.
The worst thing to be without is a computer!
Ours has been "in the shop" for a week and it has been the longest week of my life.  Sad but true.  I had to keep calling Holly to ask for my own recipes that I can't remember because I throw away the hard copies when I put them on the blog.  I have to admit, though, that I sure got a lot more done around here without the computer to sit down in front of.  Who knew I could survive without Facebook, recipe blogs, and all those other fun things I "have" to look at everyday??? 
Enough about my computer woes.  Here's a really good recipe that you are going to want to make.  I went to a church meeting where there was a tasting table (love those) and this was one of the tasty dishes.
chicken, cooked and shredded
avocado
mayo, just a little
green onion, sliced
cilantro
lime juice to taste
salt/pepper to taste

*Sorry there aren't any measurements.  I just asked what was in it and then made it to my liking.  I probably had 2 cups of chicken and then just threw the rest in until it tasted good.  I only used 1 avocado but if you really love avocados, you could use more.  I loved the lime juice, so I kept adding more of it little by little.  You definitely need a little salt, but the pepper is just if you want to.  I used a lot of cilantro and a moderate amount of green onion.  Probably 2-3 of them.  You can serve this in pitas or just eat it with chips.  We loved it and it was really good leftover, too.

  14. You could boil it or cook it in the crockpot with a little water. I just season it with salt and pepper.

  20. Made this tonight. It was delicious! I have plenty left for another day. I used two avocados, cut them into small pieces, and sorta mashed them into the chicken as I stirred it. Lots of lime is really good, for sure.

  23. I made this tonight for a park potluck tomorrow and my boyfriend and I both declared - it's not going to the potluck. LOL It's so good! And we haven't really eaten it, just tasted a bit.

    I put an avocado in my food processor with about 1/2cup of plain greek yogurt (instead of mayo), cilantro, cumin, pepper, salt and about 2 limes worth of juice. Then mixed it in with the chicken. We're going to tear this up! THANK YOU.

    1. I used 4 small cans of chicken 1 large avacado 1/2 of a limes juice. It will probably make 4 sandwiches. I'm debating putting egg in next time I make it.

  34. I'm going to get a rotisserie chicken from the deli at my local grocery store and use it to make this. That will ensure the chicken has enough flavor and it'll be perfect. This is a great recipe, I'm in LOVE with avocado. Can't wait to try it!

I'm a huge avocado fan so this is awesome :) For those above asking if it would keep -- anytime you make guacamole or something with avocado, adding a bit of mayo helps to keep it fresh longer.   37. I have made this 2 times already. Made with small/medium chicken breast, 1/2 avocado, diced white onion, diced cilantro, lime juice and salt. It is so yummy.

  40. I have lunch with my friend every Tuesday and this is what we're doing today! I am going to try it out with Greek yogurt, and maybe eat some with tortilla chips and put some on top of a green salad with tomatoes, corn, etc. and Trader Joe's cilantro dressing. Yum!

  44. This is delicious! I subbed a couple tablespoons of sour cream for mayo. It was awesome and my husband even liked i. after complaining all evening about not wanting chicken salad he asked for seconds. I will totally make this again, plus its a good lunch for my weight watchers.

  46. love avocados but who doesn't. I have so many healthy avocado recipes that it is hard to choose which one to prepare. One of my favorites is avocado with a pinch of salt, tomatoes and a little lime. I know it is a pretty simple recipe but it is delicious. If your looking for more healthy recipes try a diet smoothie they are a great way to cut calories without feeling deprived.
