Corn Enchiladas

I got this recipe from the Enlightened Homemaker blog. I liked it and thought it was fun to try a meatless enchilada recipe. For all you corn lovers out there, this one is right up your alley.


12 corn tortillas
2 Tbs. butter
1 medium onion, chopped finely
3 cups frozen, white corn OR 6 ears with corn sliced off
1/2 tsp. cumin, more if desired
1/4 cup water
1 4oz. can diced, green chilies
1 cup sour cream
1 cup shredded jack cheese
cheese for top

Melt butter in pan, add onions and saute until limp. Add corn, water and cumin. Cover and cook over medium heat for 5 minutes stirring occasionally. Remove from heat and add remaining ingredients, including 1 cup cheese. Add salt and pepper to taste. Lay 6 tortillas in 9x13 pan. Spread half corn mixture on top. Sprinkle with cheese. Repeat and top with cheese. Bake uncovered at 375 for 20 min.
