Mexican Corn Salsa

We love, love, love this salsa! My husband would bathe in it if he could. It doesn't last more than a day at our house. It requires some chopping but it's well worth it!

5 Roma tomatoes
3 avocados
1 can white corn
1 can black beans
1/2 bunch cilantro
2 bunches green onion
1/2 bottle Italian dressing

Dice tomatoes, avocados, and green onions. Chop cilantro really well. Combine all ingredients in a bowl. Add dressing. Stir and serve with chips. Delicioso!!

Remember when Jen brought a bowl of this in on Christmas and we devoured it like wild animals?! Definitely one of my faves.

Hey..I make this, but we call it black bean salsa. :) I LOVE this salsa. It is REALLY good in burritos.

I love this salsa for a meal in the summer. I like it with "Fritos" - the large ones so you can scoop A LOT of salsa in your mouth! It's definitely a winner and thanks for reminding me about it. Think I'll make some soon!
