Mint Brownie, the easy way.

Wow it has been awhile since I have posted but I just want you all to know that I am a huge fan of all your recipes. This one isn't so much a recipe just one of those amazing ideas that will forever change my life. I have never been a huge fan of mint brownies because for some reason it reminds me too much of toothpaste on a brownie, so lucky for me, these brownies lack the toothpaste taste.

1 box brownie mix (I am a Double Chocolate Ghirardelli brownie mix snob)
1 box Junior Mints (Thin Mints work great too)
Whipping cream or ice cream for the top.

Just bake the brownies as directed on the box and right when you pull it out of the oven pour the box of Junior Mints on top until they are all flat. Let them sit and melt for about 10 min then spread them out with a spatula.
I topped it with fresh whipping cream but I am sure ice cream would do the trick.

Way to go Jade. I think mint brownies DO taste a little like toothpaste too. But I love Junior Mints so this sound delish! I'll definitely be trying it - definitely with Ghirardelli mix

Yum! I love mint brownies. I, too, am a Ghirardelli snob.
