Rice Krispie Ice Cream Dessert

My SIL, Jen, introduced our family to this wonderful dessert!! It's a definite crowd pleaser.

1 cube butter (melted)
1 cup brown sugar
1 cup coconut
2 cups Rice Krispie Cereal
1/2 gallon vanilla ice cream (softened)

Melt butter and mix with brown sugar, coconut and cereal. Put in 9x13 pan and bake at 300 for 15 minutes. Remove from oven and scoop half of mixture out. Spread remaining mixture to cover bottom of pan. Scoop softened ice cream over mix and spread. Top with remaining cereal mix. Cover and freeze until ready to serve. Great with chocolate or fruit topping.

this is a delicious treat- my version of the recipe calls for 1 cup of slivered almonds mixed in! Love it!

I too LOVE this dessert - especially with coconut. I like it with strawberries on top.

You totally left out the nuts. I like it with nuts...those slivered almonds sound good. One of my favorite desserts for sure. I don't remember having to bake the topping???

That sounds so good! I got a recipe for fried ice cream that's not really fried and it sounds similar, but I think this might be better!

I never bake mine either and I add 3/4c. walnuts. Most of the Tuckers don't like nuts, but the Flake's LOVE nuts on EVERYTHING (almost). I also have a recipe for a rasberry topping that is so yummy. I will fine the recipe and post it.
